I have been reading a lot on ventilation and I'm afraid this might be a question without an easy answer but.........
What is the minimum CFM for adequate ventilation for a small one car garage/studio? Is there some formula or is it just a standard amount?

It is base on the "face" or opening of the hood you are going to use. For overhead hoods (similar to a kitchen hood), use 125 CFM per square foot of hood opening. For enclosed workstation hoods, use 100 CFM per square foot of "face" or opening.

oh, this gets more and more confusing for me...so, is a kitchen type hood vent adequate if it is mounted just above the work area?

Yes, but be sure to allow for adequate clearance so you don't bang your head every time you stand up or sit down. Typically a minimum of 30" to a maximum of 42" above the table should be fine.
