what is the best/most versatile torch out there for under or around $500? preferably a surface mix. ALSO! are there digital pyrometers that you can set to shut off the kiln at a certain temperature? i keep letting my kiln get too hot and it melts my beads! : (

In that price range, I would go with a GTT Lynx or you might be able to pick up a GTT Cheetah used for under $500. Another option depending on what you are wanting to do with the torch might be a Nortel Midrange Plus. I am not sure what these go for now a days, but it is a minor on top of the midrange so you have two sizes of torch in one.

You can get a standalone digital controller for your kiln. There are several makers, but I picked mine up from an LE member named Smuttboy for a reasonable price. He has three versions at http://hotasstools.com/digikiln.htm
