No mini fridges at least not ever in the rooms I've been in.
I bring instant oatmeal because there is a coffee maker to heat up water.
Those little peanut butter individual serving things come in handy. Last year I brought a 4 pack of hawain rolls and peanut butter. Just in case I didn't have a chance to get lunch while teaching
Believe me I know how to live on a budget
Del Mar deli has pretty good prices and there is an In and Out Burger in the casino. They also have a lunch "bar" set up outside the classrooms With sandwiches and a chicken ceasar salad that is big enough to share.
Sorry about the suitcasr fee that stinks - This is why I fly Southwest!
