Are there any specific kinds of metal you need to use or for that matter, not use, when using these key for torch work? I did not see this mentioned but I could have easily overlooked it.

If you're talking about the components to make the mandrel, do not used galvanized metal. It throws off bad fumes in the flame.

My problem is FINDING the keys! I've noticed on ebay and places like that the large "lots" of keys are actually fairly new and antiqued and made to look old (and sometimes not good metals).

I've had my best luck going to antique shops or flea markets but in my area the latter is tougher.

Just bought the nuts, bolts, and washers today at Ace Hardware to make some of these key mandrels, after getting iron keys from EmKay's bulk buy. Now to go play at the torch . . .
